Set your Instant Pot to "Sauté" mode. Add olive oil and chicken thighs. Sauté until they're browned on both sides
In the same Instant Pot, add minced garlic. Sauté for about a minute until fragrant.
Stir in white rice, dried oregano, dried basil, salt, and black pepper. Sauté for another minute.
Return the sautéed chicken to the Instant Pot. Pour in chicken broth. Ensure the rice is submerged in the liquid.
Close the Instant Pot lid and set to "Pressure Cook" on high for 10 minutes. Allow for a natural release for 5 minutes, then manually release the remaining pressure.
Open the Instant Pot and stir in the grated Parmesan cheese until it's melted and creamy.
