In a large skillet, heat olive oil over medium-high heat. Sauté the onions, green bell pepper, and red bell pepper until they become tender and slightly caramelized.
Add minced garlic to the skillet and sauté for an additional minute until fragrant.
Push the sautéed vegetables to the side of the skillet and add the thinly sliced beef.
Lay out 4 slices of Italian bread in a greased 9x13-inch baking dish. Spread mayonnaise evenly on each slice.
Spread the cooked beef and sautéed vegetables evenly over the bread slices.
Sprinkle shredded provolone cheese generously over the beef and veggies.
