Peel and mash the ripe bananas in a mixing bowl.
In a separate bowl, combine the flour, sugar, baking powder, baking soda, and salt.
To the mashed bananas, add the milk, egg, and vanilla extract. Mix well.
Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; lumps are okay.
Heat a griddle or non-stick skillet over medium-high heat and grease it with butter or oil.
Pour a ladleful of pancake batter onto the hot griddle for each pancake.
Cook the pancakes until you see bubbles forming on the surface.
