Season the chicken breasts with 1 tablespoon of Cajun seasoning, salt, and pepper. Heat olive oil in a skillet and cook the chicken until it's no longer pink in the center
In the same skillet, add a bit more olive oil if needed. Sauté the diced onion, red bell pepper, green bell pepper
Stir in the orzo pasta and diced tomatoes (with their juice). Add the remaining tablespoon of Cajun seasoning.
Pour in the chicken broth and bring everything to a simmer. Cook until the orzo is tender and has absorbed most of the liquid.
While the orzo is cooking, slice the cooked chicken breasts into thin strips.
Once the orzo is cooked, return the sliced chicken to the skillet. Stir to combine and heat through. Adjust seasoning if needed.
